| Recipes: Chewy Molasses sugar cookies
These are delicious! If you can get
demerara,
muscovado, and
turbinado sugar or large crystal sugar, (typically called
sanding sugar), they are best rolled in any of those, rather than
regular granulated sugar.
3/4 c. shortening (or I prefer 1 1/2 sticks butter)
1 c. sugar
1/4 c. molasses
1 egg
2 tsp. baking soda
2 c. sifted flour
1/2 tsp. ground cloves
1/2 tsp. ground ginger
1 tsp. cinnamon
1/2 tsp. salt
Preheat oven to 375 degrees. Melt shortening or butter in a 3 or 4
qt. sauce pan, over low heat. Remove from heat and let cool. Add sugar,
molasses and egg. beat well. Sift together flour, baking soda, cloves,
ginger, cinnamon and salt. Add to molasses mixture. Mix well. Chill.
Form 1 inch balls and roll in the sugar. Place on a greased cookie
sheet, or on parchment paper, 2 inches apart. bake at 375 for 6-9
minutes. Yield: 5 dozen ENJOY!!
